To prevent your homemade pizza from becoming soggy with all of the juicy toppings you add, lightly coat the bare dough with olive oil. Pizza sauce, peppers and meats can all weigh down a pizza dough and cause it to be soggy even after baking so be sure to brush on a bit of olive oil for a crispier, firmer pizza!

Do not be afraid to experiment. There is no rule that says you need to follow a recipe exactly. If you do not care for an ingredient, leave it out. If you think a different ingredient would taste better, substitute it. If you think the dish is missing a little something, add it.

Purchase a quality loaf of bread that you can use as a side piece to a variety of meals. Bread goes great with any dish that has sauce or cheese, as you can dip it in a variety of different toppings. Include a loaf of Italian or French bread with your next meal.

Save your butter and margarine wrappers to use when baking. The wax paper that butter and margarine is wrapped in just happens to be the perfect size for greasing pans or rubbing onto a potato before popping it in the oven for baking. Save wrappers butter-side to butter-side in a closed storage container, so it stays fresh for your baking needs.

When you learn to cook for yourself, do not be afraid of cooking in large batches. The freezer becomes your friend once you are making your own meals. Surplus food that you prepare, but will not use immediately, can be stored almost indefinitely in your freezer. Cooking in large batches is the best way to maximize the utility of your cooking time.

Know the gender of your eggplant! There are both male and female eggplants, and it pays to know the difference. The seeds of an eggplant can be very bitter. A female eggplant's seeds have a tendency to be more bitter than those of a male eggplant. You can identify a male eggplant by its base - it will be smooth and round, whereas the female base is more oval in shape and deeply indented.

Fresh herbs can add a great deal to most recipes. Herbs can be tricky to handle, though, because they need to be chopped so finely. Sprinkling salt over the cutting board before chopping herbs can cut down on mess. The salt encourages herbs to stick to the board instead of flying off.

When trying to cook healthy foods, it is important to cut back on the amount of oils and butters that you are using. A great alternative is using nonstick bakeware or a nonstick cooking spray. Many of the sprays have little to no calories and make foods healthy and cleanup a breeze.

If you are stuck trying to figure out what to cook for dinner during the week, consider building your meals around themes. "Mexican Monday" could mean burritos or a nice taco salad. How about "Tuscan Tuesday" featuring spaghetti and meatballs or maybe meatball subs? And "Fish Friday" offers lots of options for shrimp, salmon or even tuna. Bring the whole family into the fun by letting the kids pick a theme and help plan the meal that day.

Place fruit that is not quite ripe in a plastic bag with a few small holes to allow it to ripen. The plastic helps retain the gases used by ripening fruit while the holes allow fresh air to circulate across the fruit. This also helps you keep your fruit fresh longer!

Spices should be stored in a cool, dark area so that they stay as fresh as they can for as long as possible. Keeping your spices in warm places, such as above your stove, will really take a lot of the flavor away.

To improve your cooking preparation time, their are many tools of the trade that can help. For example, there are many devices that will help you chop faster, slice faster, and grate faster! It is beneficial to do this because the less time you spend preparing, the more time you are cooking and eating!

Being highly organized is necessary when you are preparing several dishes at the same time. If not, you are sure to burn or overcook something. Organizing your kitchen cooking area creates a more productive kitchen. When you are disorganized, misplacing items or making food inedible becomes much more likely.

Keep a supply of chopped onions all ready to go, in your freezer. It is easy to be dissuaded from cooking a particular recipe because you don't want to go through the tears and smell of cutting up onions. When you are cutting one onion, you might as well take the time and cut up several of them. Put them in a baggie and freeze them!

If you aren't the best in the kitchen and you are ready to tackle a recipe, choose one that isn't too complicated to begin. You will want to stick to recipes that have a minimum of ingredients and ones that only require one or two pots to create. From there, you can aspire to be the next Julia Child.
